Easy Handmade Cheesecake

These days, there are a lot of delicious sweets, but we are hard to get it because COVID-19 pandemic and it is pretty expensive. Then I recommend you making dessert yourself. Handmade dessert cost lower than buying. In this time, I introduce 2 types cheesecake recipe. Let’s enjoy tea time!!

1-1. Baked Cheesecake Basque style

This cheesecake origin bake surface browned and be toasty. Inside is very rich and moist. Furthermore, it is super easy to make!!

1-2. Ingredients (Baked Cheesecake Basque style)

15cm whole

 ・250g cream cheese

 ・70g sugar

 ・1 yolk

 ・2 eggs

 ・1 tea spoon cake flour

 ・125ml heavy cream

1-3. How to make (Baked Cheesecake Basque style)

Ⅰ. Lay cooking paper on a cake mold.

Ⅱ. Knead cream cheese in bowl.

 Point! When cream cheese is cold, it is a little hard. Therefore, be room temperature previously.

Ⅲ. Add sugar and mix.

Ⅳ. Add yolk and mix.

Ⅴ. Add well-mixed eggs and mix. (separate 2~3 times)

Ⅵ. Add cake flour with sieve and mix well.

Ⅶ. Add heavy cream and mix.

Ⅷ. Pour cake dough into mold.

Ⅸ. Get air bubbles with toothpick or fork.

Ⅹ. Bake in oven preheated to 220℃ for about 25min.

(Baking time depends on oven. Therefore, sometimes see cake’s condition.)

Ⅺ. Once it’s cool down, put in a refrigerator and wait for over 3 hours.

Ⅻ. Complete!!

 

2-1. No-bake cheesecake

   No-bake cheesecake is fresher than baked cheesecake but it is very creamy. So you tend to eat it too much.

2-2. Ingredients (No-bake Cheesecake)

15cm whole

 ・15 biscuits

 ・50g butter

 ・250g cream cheese

 ・70g sugar

 ・120g yogurt

 ・half lemon

 ・200ml heavy cream

 ・5g gelatin powder 

 ・30ml milk

2-3. How to make (No-bake Cheesecake)

Ⅰ.grate biscuits

Ⅱ. Add melted butter to biscuits and mix well.

Ⅲ. Lay on mold and solidify biscuit with spatula and bottom of glass.

Ⅳ. Bake in oven preheated to 180℃ for about 10min.

Point! Don’t say “it is not No-bake!”.

 

Ⅴ. Knead cream cheese in bowl.

Ⅵ. Add sugar and mix. 

Ⅶ. Add lemon juice and mix.

Ⅷ. Add yogurt and mix.

Ⅸ. Shave lemon peel and add

Ⅹ. Beat heavy cream softly with another bowl.

Ⅺ. Add whipped cream and mix softly.

Ⅻ. Mix with gelatin powder and milk in hot water bath.

ⅩⅢ. Add mixture of gelatin and milk and mix.

ⅩⅣ. Pour cake dough into mold.

ⅩⅤ. put in a refrigerator and wait for over 6 hours.

ⅩⅥ. Complete!!

Point! When remove from mold, once warm up mold with steamed towel. Like a below picture.
